Title: Eggnog Quick Bread Categories : Breads, Quick, Dairy, Brunch Serving size: 16 Servings 2 Eggs 1 c Sugar 1 c Dairy eggnog (not canned) 1/2 c Butter or margarine; melted 2 ts Rum extract 1 ts Vanilla 2 1/4 c Flour 2 ts Baking powder 1/2 ts Salt 1/4 ts Nutmeg Heat oven to 350 deg. Grease bottom only of a 9X5 loaf pan. Beat eggs in large bowl. Add sugar; eggnog, margarine, rum extract and vanilla; blend well. Lightly spoon flour into measuring cup; level off. Add flour, baking powder, salt and nutmeg, stirring just until dry ingredients are moistened. Pour into greased pan. Bake for 45-50 minutes or until a tooth-pick inserted in center comes out clean.
