FROZEN LEMON CREAM

Ingredients - Preparation Method:

1 egg -- well beaten 1/4 cup lemon juice 1/8 teaspoon salt 1 teaspoon lemon peel -- gratedcup 1/4 cup butter -- melted 2 drops food coloring -- yellow 1 cup whipped cream 1/2 cup brown sugar 1 pinch nutmeg 1/2 cup nuts -- chopped 3 cups bite sized toasted corn cereal -- crushed 1 teaspoon vanilla 3/4 cup grated coconut Line the bottom and sides of a loaf pan with wax paper. Extend the paper over the rim of the pan. Combine egg, lemon juice, sugar, salt and lemon peel. Heat in top of double broiler until mixture coats a spoon. Cook 12 to 15 minutes over hot water but not boiling water. Remove from heat. Stir in vanilla and food coloring. Cool thoroughly. Combine the butter, brown sugar and nutmeg. Add nuts and corn cereal crumbs. Mix until evenly blended. Reserve 3/4 cup of the crumb mixture for topping. Press remaining crumbs into prepared pan. Fold in the coconut and whipped cream into cooled lemon mixture. Spoon into pan. Top with reserved crumbs. Press crumbs together lightly. Cover and freeze for at least 6 hours...or overnight. - - - - - - - - - - - - - - - - - -
