Old-Fashioned Prune Whip

Ingredients - Preparation Method:

2 cups dried prunes -- cooked, mashed 2 teaspoons lemon juice 1 dash salt 1 teaspoon lemon zest 4 tablespoons powdered sugar 4 egg whites Pit prunes and mash. Blend in lemon peel and lemon juice, 2 tablespoons sugar and salt. To stiffly beaten egg whites, add remaining sugar, beating until mixed well. Fold in prune mixture gently. Pile lightly into 1-1/2 quart baking dish. Bake at 350 degrees for 20-30 minutes or until knife inserted in center comes out clean.
