Chocolate Snowball

Ingredients - Preparation Method:

1/2 pound semi sweet chocolate 1/2 pound butter 1 1/2 teaspoons instant coffee granules 1 cup sugar 2 tablespoons sugar 4 eggs 1/2 teaspoon vanilla extract 3/4 cup heavy cream 1 tablespoon brandy 1. Heat the oven to 325 degrees. Line an 8 cup metal mixing bowl with a double thickness of aluminum foil. 2. Chop the chocolate, cut the butter into chunks. Combine the chopped chocolat e, the coffee granules and 1/2 cup water in a heavy saucepan over low heat; sti rring occasionally until the chocolate has melted. 3. Stir in the butter a bit at a time until it has melted and is incorporated i nto the chocolate; remove from heat. 4. With a wooden sppon beat in the eggs one at a time. 5. Add the vanilla, pour into the prepared bowl and bake unitl a thick crust fo rms on top about 1 1/2 hours. Let stand until cool, cover and refigerate overni ght. 6. Invert onto a serving plate, remove the bowl and peel off the foil. 7. Whip the heavy cream with the remaining 2 Tbsp sugar and the brandy until th e cream holds stiff peaks.
