Title: Oatmeal Scotchies

Serving size: 48 servings 1 1/4 c All-purpose flour 1 ts Baking soda 1/2 ts Salt 1/2 ts Cinnamon 1 c Butter; softened 3/4 c Sugar 3/4 c Firmly packed brown sugar 2 Eggs 1 ts Vanilla extract or grated Peel of 1 orange 3 c Quick or old-fashioned oats Uncooked 12 oz Butterscotch morsels Preheat oven to 375~F. In small bowl, combine flour, baking soda, salt and cinnamon; set aside. In a large mixer bowl, beat butter, sugar brown sugar, eggs and vanilla extract or orange peel until creamy. Gradually beat in flour mixture. Stir in oats and butterscotch flavored morsels. Drop by measuring tablespoonfuls onto ungreased cookie sheets. Bake 7-8 minutes for chewier cookies; 9-10 minutes for crisper cookies. Variation: OATMEAL SCOTCHIE PAN COOKIE Preheat oven to 375~F. Spread dough into greased 15 1/2 x 10 1/2 x 1 inch baking pan. Bake for 18-22 minutes or until very lightly browned. Cool completely. Cut into thirty-five 2-inch squares. -----
