Thyme Cookies

Ingredients - Preparation Method:

1 cup butter or margarine 1 1/2 cups sugar 2 large eggs 1 tablespoon dried orange peel -- soaked and drained 2 tablespoons fresh thyme leaves -- chopped or 2 teaspoons dried thyme 2 teaspoons baking powder 2 1/2 cups flour 1/4 cup sugar Preheat oven to 375 degrees F. Combine butter and 1-1/2 cups sugar. Beat with mixer until well blended. Beat in eggs and mix until smooth. Add thyme, orange peel, flour and baking powder; mix well. Put remaining 1/4 cup sugar into a shallow bowl. Shape dough into 3/4-inch balls (chill dough to make this step easier). Roll balls in sugar to coat, and place on ungreased baking sheet. Bake at 375 degrees F. until edges are brown, about 12-15 minutes. Remove from baking sheet and cool on racks. Makes about 5 dozen. - - - - - - - - - - - - - - - - - - NOTES : Try substituting other herbs for the thyme: lavender blossoms, cinnamon basil, fennel seed, pineapple sage - whatever sounds good. Use the same proportions as for the thyme.
