Ingredients - Preparation Method:

Crepes: 1/2 c flour 1 lg egg 3 tbsps amaretto non-dairy creamer 1/2 c skim milk 1/8 tsp nutmeg 1 tsp vanilla Filling: 2 c orange juice 2 tbsps Grand Marnier 8 peaches -- peel & thinly slice 1 tsp honey 1 tsp cinnamon 1 tsp grated orange peel Put flour in mixing bowl. Make a well in flour and add egg. While whisking pour in creamer and the milk. Whisk until lumps are gone, then whisk in nutmeg and vanilla. Cover batter and set aside for 30 minutes. Preheat nonstick pan for 1 minute over medium-high heat. Spray twice with nonstick spray. Spoon enough batter into pan to form thin layer over bottom, about 3 tbsp and tilt pan to spread evenly. Cook 1-2 minutes until edge is firm and begis to separate from bottom of pan. Flip crepe and cook 1-2 minutes more. Remove to sheet of waxed paper. Cook all crepes. Combine orange juice, Grand Marnier, peaches and honey in a frying pan. Cook for 10 minutes until liquid turns syrupy. To assemble, lay each crepe on a plate. Mound 1/3 c peach slices on bottom half of crepe and flip top half over. Spoon a tbsp of syrup over crepe and dust with cinnamon and orange peel. - - - - - - - - - - - - - - - - - - Per serving: 116 Calories; 1g Fat (7% calories from fat); 3g Protein; 23g Carbohydrate; 23mg Cholesterol; 15mg Sodium
