Ingredients - Preparation Method:

Dressing 1/2 cup mayonnaise 1/2 cup yogurt -- plain 1/2 cup sour cream 3 tablespoons lemon juice 1/2 teaspoon dry mustard 1/2 clove garlic -- minced 1 tablespoon curry powder salt and pepper -- to taste Salad 1 pound pork roast 1/4 cup soy sauce 1/2 clove garlic -- minced 2 bunches spinach 12 slices pineapple -- fresh 2 whole papaya -- sliced 8 ounces macadamia nuts Prepare dressing. Refrigerate at least one to two hours before serving. Cut pork into thin strips. Mix soy sauce and garlic and pour over pork, coverin g all pieces. Marinate at room temperature 30 minutes. Pour off marinade and co ok pork strips under broiler until done, about three minutes each side. Remove and drain on paper towels. When cool, cut into bitesize pieces. Refrigerate. Wash spinach thoroughly. Remove stems and damaged leaves. Dry thoroughly. Place leaves on chilled salad plates and top with pineapple and papaya slices, follo w with pork, and sprinkle on nuts.
