Sonora Casserole

Ingredients - Preparation Method:

First step: the tomato sauce 2 cups canned tomato sauce 1/2 teaspoon ground cumin 1 teaspoon cayenne pepper 1 teaspoon white vinegar 1/4 teaspoon granulated garlic salt -- to taste 6 fresh corn tortillas -- cut in 1/2" strips 3 cups zucchini -- sliced 1 cup fresh or canned corn 4 ounces can diced green chilies 3/4 cup grated cheddar 3/4 cup sour cream thinly sliced green onions for garnish First step: the tomato sauce Combine ingredients and simmer over low heat. Next: Slice six fresh corn tortillas in 1/2 inch strips. Fry in very hot oil and drain. And: Steam 3 cups of sliced fresh zucchini until tender, then drain. In a separate dish, combine the zucchini, 1 cup of fresh or canned corn, a 4 ounce can of diced green chiles, 3/4 cup grated cheddar cheese, and the fried tortilla chips. Spoon the zucchini mix into a well-oiled 9x12 inch baking dish and spread the red sauce over the mixture with another layer of cheddar cheese spooned over the top of the sauce. Bake at 350F for 30 minutes. Remove dish from oven and layer with 3/4 cup sour cream and thinly sliced green onions. - - - - - - - - - - - - - - - - - -
