Ingredients - Preparation Method:

6 flour tortillas 2 cans chopped green chiles (8-ounces ea.) -- drained 8 ounces smoked turkey -- thinly sliced 4 cups Monterey Jack cheese -- shredded 1 cup frozen corn -- thawed 5 eggs 2 cups milk 1 Dash Tabasco sauce 1/2 tablespoon garlic powder Freshly ground pepper -- to taste 1/2 cup chopped fresh cilantro Line a greased 9x13-inch baking pan with the tortillas. Layer the chiles, turkey, cheese and corn 1/2 at a time in the prepared pan. Beat the eggs, milk, Tabasco sauce, garlic powder and pepper in a bowl. Pour ov er the layers. Top with the cilantro. Chill, Covered, overnight. Bake at 350 degrees for 50 to 60 minutes. Cool and cut into squares to serve. Authors Note: This is a great "do ahead" entree if you're planning for company. I often offer it as a daily special and our customers love it served with our Caesar Salad. (see recipe) - - - - - - - - - - - - - - - - - -
