Basil-Tarragon Vinaigrette

Ingredients - Preparation Method:

1/2 cup vinegar ** 1 tsp. salt 1/4 tsp. fresh ground pepper 1 tsp. fresh thyme * 1 tsp. fresh tarragon ** 1 tsp. fresh oregano * 8 leaves of fresh basil chopped 1 pkg. sweet-n-low 1/2 tsp. Tabasco sauce 1 large clove garlic -- finely chopped 4 green onions -- including tops chopped 2/3 cup extra virgin olive oil Combine all ingredients except for the olive oil in a medium sized bowl. Whisk briefly to combine. Add the extra virgin olive oil and whisk until incorporat ed. This is an excellent dressing for pasta salads and also superior as a marin ade for tomatoes and other fresh vegetables. The mild flavor of the fresh herb s enhances the natural flavors of the ingredients, without overpowering the mor e delicate components. Best made up fresh daily. The delicate oils of the her bs deteriorate when stored for any length of time. Note: Best when fresh herbs are used!!
